Super Simple Shrimp Creole image

1 med package uncooked, deveined shrimp* (approx 4-8 shrimp per person) -if frozen, thaw first
4 Tbsp Good Seasons Italian Vinaigrette with Extra Virgin Olive Oil Dressing
1 rib celery, diced
1 Tbsp minced garlic (equals approximately 3 cloves)
1 small onion, diced fine
1 cup carrots (can be thin sliced or even matchstick carrots)
Salt & pepper to taste
1 green bell pepper, seeded and diced into bite-size pieces
1 can diced tomatoes, undrained
3 Tbsp dried parsley - coarsely ground
2 Tbsp Creole seasoning
1 can (14 oz.) tomato sauce
1/4 cup water
2 cups instant rice, prepared

Steps:

  • Thaw shrimp either in fridge overnight, or in colander with cool water running over it; when thawed, rinse and drain, then set aside. Pull tails off if still on.
  • In saucepan, heat Good Seasons Dressing on medium heat. Add celery, garlic, onion, carrot, salt and pepper - saute until onion is translucent, about 5 minutes. Add green pepper, and continue cooking until pepper is tender-crisp. Add diced tomatoes, parsley, Creole seasoning, tomato sauce and 1/4 cup of water. Stir. Reduce heat to medium low, and simmer for 20 minutes.
  • Add shrimp and cook for an additional 5 minutes or until shrimp is pink & cooked. Serve over rice.
