Bob W's daring beer stew. image

Got the recipe from a cowboy cook book and added to it to make it better.

Number Of Ingredients 16

3/4 cup(s) flour
- salt and pepper to taste
1 teaspoon(s) thyme, dried
3-4 pound(s) beef chuck,. cut into cubes
3 slice(s) bacon cut up.
1/4 cup(s) tomato paste
1/4 teaspoon(s) garlic, minced.
6 - sprigs of parsley, chopped
1 - bay leaf
3 cup(s) beer.
1 cup(s) red wine, dry, full bodied or your choice
3 medium potatoes, cut into 1/4s
6 - carrots, cut into rounds
3 large onions diced.
1 - package of cooked egg noodles.
1 teaspoon(s) hot sauce

Steps:

  • In a large Dutch oven cook bacon till crisp. Put flour salt and pepper and dried thyme in a pepper bag. add cubed meat. Shake till meat is covered. Remove cooked bacon from Dutch oven and drain on papper towel Brown beef in bacon grease on all sides.
  • Once meat has been browned. Add beer, wine, tomato paste, parsley, onion, bay leaf and what is left in the bag of flour mix.. Bring to a boil. then reduce heat and simmer for 1 1/2 hours, partially covered.
  • Remove bay leaf. Then add potatoes, garlic, and carrots. At this point I add 1 teaspoon of hot sauce, you can leave it out. I like my stew with a bite. Partially cover and simmer for one hour more. Serve over cooked egg noodles
