Blushin' Peach Butter image

I love the bright, juicy flavor of peaches. It's so nice to open a jar of this and enjoy it on a hot buttered biscuit. It pairs nicely with ham and sausage...making me hungry just thinking about it (:

Number Of Ingredients 4

2 pound(s) ripe peaches, peeled, seeds removed, and quartered
1 cup(s) cherry juice cocktail - i used juicy juice 100% juice
- 1/2 cup sugar per cup of puree - for me it measured 2 cups of sugar
1/2 tablespoon(s) lemon juice

Steps:

  • Add peach quarters and juice to dutch oven. Cook on medium-high until peaches are soft about 10 minutes. Allow to cool enough to pour into blender.
  • Blend until smooth. Take note of the measure - for me it was 8 cups.
  • Add peach mixture and 1/2 cup sugar for each cup of puree - for me it was 2 cups sugar total.
  • Cook on low until thick and bubbly stirring often. Cook time for me was about 3 hours.
  • In a large stock pot boil clean jars, lids for 10 minutes. Remove and fill to 1/4" to the top.
  • Place back in stock pot. Boil in water bath for 10 minutes. Turn off heat and allow to sit for another 10 minutes.
  • Place in a location and do not touch for 24 hours. Check lids have set properly - if not refrigerate immediately. Store others in pantry. Enjoy!
