Steps:
- Make Simple Syrup: Combine the sugar and water in a small saucepan and bring to a simmer over medium-high heat, stirring until the sugar dissolves and the mixture is transparent. Turn off the heat and let cool. Measure 3 ounces for the ice pops, store the rest in the fridge for other uses. Make the Pops: Pick out any stems or leaves from the blueberries and purée them in a food processor. You should have just over 1 cup of puree. Combine the puréed blueberries, simple syrup, and lemon juice. Taste and adjust sweetness (should not be very sweet). Stir in the liquor. Pour in the ice pop molds and freeze for 4 - 5 hours or until set.
