BLUE DOG BAKERY'S WHEAT BERRY SALAD image

Number Of Ingredients 11

3 cups wheat berries
1 teaspoon salt
2 cups (10 ounces) frozen lima beans, or soy beans
1/4 cup walnut oil
3/4 canola oil
1/8 to 1/4 cup sherry vinegar
1 cup dried cranberries or currants
1 cup walnuts, chopped
2 cups diced celery
1 cup chopped scallions
pepper to taste

Steps:

  • In a large saucepan, cover wheat berries with water. Add salt. Bring to a boil over high heat. Reduce heat, and simmer until tender but still chewy, about 1 hour. Drain. Cook lima beans according to package directions. Drain. Combine walnut oil, canola oil and vinegar. Add to warm berries and limas. Toss. Soften dried fruit by soaking in water, if needed. When bean mixture has cooled, add dried fruit, walnuts, celery and scallions. Toss. Taste, and season with salt and pepper as needed.
