BLENDED ZUCCHINI ROSEMARY SOUP image

Number Of Ingredients 11

1/2 stick butter
3 tbsp olive oil
1 medium onion, diced
2 small leeks, diced
4 stalks celery, diced
2 carrots, diced
4 garlic cloves, minced
2 tsp fresh chopped rosemary
2 small russet potatoes, cut into 1/2" cubes
6 cups chicken broth
4 zucchini, sliced 1/4" thick

Steps:

  • Sautee mirepoix in butter and oil until soft. Add garlic, rosemary, salt and pepper. Sautee a few more minutes. Add potatoes and stock. Bring to a boil, simmer until potatoes are tender. Add zucchini, continue simmering until soft. Blend soup.
