Steps:
- Prepare chicken the night before you plan to cook. Place chicken breast between pieces of wax paper and pound to an even thickness of 1/2 inch. Rinse chicken under cold water and pat dry. Marinade chiken in a container over night. Melt butter, coat chicken, and dredge in rub. Heat vegetable oil in a heavy iron skillet on high until hot. Add chicken and cook for 2 minutes on each side. The center should reach an internal temperature of 160-165 degrees. Do not overcrowd the skillet or chicken will cook unevenly.
