- 1. Preheat oven to 350.
- 2. Sift flour, mixed spice if using, sugar, salt and baking powder into a bowl Gradually whisk in milk and vanilla extract to give a thick batter. Let sit for 15 minutes.
- 3. Melt butter over gentle heat in shallow metal baking pan. Give rested butter a quick stir, then pour batter into pan over melted butter. Don't worry if the butter floats around the mingles with the batter at this stage.
- 4. Immediately scatter blackberries over the batter and transfer cobbler to preheated oven. Bake for about 55 minutes, til batter has puffed up and set. Serve warm with cream or custard. Serves 4 to 6
