BLACKBERRY CHIPOTLE PORK TENDERLOIN image

2- 1lb pork tenderloins
Adobo
3 T vegetable oil
1 small jar seedless blackberry jam
4 cloves garlic, mashed
2-3 canned chipotle peppers, mashed
1-2 T soy sauce
1 T pomegranate vinegar

Steps:

  • heat oven to 400 season tenderloin with adobo , set aside place jam, garlic and chipotle chilies in small pot on medium-low heat and bring to a simmer for 4 minutes. Add 1 T soy sauce, simmer and additional minute. Add vinegar, then correct seasoning with additional soy sauce or salt& pepper. Heat cast iron skillet until hot; add veg. oil. Add pork and sear well on all sides. Remove from heat and place on baking sheet. Brush generously with ¾ or the raspberry chipotle glaze and place in oven for 10-12 min. Remove from oven and let rest 4-5 min. Slice and serve with remaining glaze.
