Black pepper crusted Meatloaf image

This makes a moist, spicy, and delicious meatloaf, and the sauce tops it off!

Number Of Ingredients 21

3 lb lean ground beef
2 eggs
1/4 c no salt ketshup
2 Tbsp worcestershire sauce
1/4 c olive oil
2 tsp bold and spicy mustard
3 clove fresh grated garlic
1/2 c finely chopped celery
1/2 c finely chopped onion
1/2 tsp cumin
1/2 tsp granulated garlic
1/2 tsp granulated onion
2 tsp low sodium brisket rub
1/2 c coarse black pepper
SAUCE
2 can(s) 8 oz. each, no salt added tomato sauce
2 Tbsp molasses
2 tsp bold and spicy mustard
1 Tbsp worcestershire sauce
1/2 c brown sugar
1 tsp ea. of cumin, granulated garlic, granulated onion, and balsamic vinegar

Steps:

  • 1. Break ground beef up in large mixing bowl. Add chopped onions, celery and grated garlic. Sprinkle on spices. In a cup, mix together olive oil, Worcestershire sauce, eggs, mustard and ketchup. Mix together well, pour into ground beef. Mix together till all ingredients are combined.
  • 2. Form into a log and pat downward and inward a couple times to help keep it from falling apart. Pour coarse black pepper into your hand and pat on top and sides of meatloaf.
  • 3. Place in baking dish and bake 375° for 1- 1/2 hr. Check temp with meat thermometer after one hour. Cook a few minutes longer if needed.
  • 4. FOR SAUCE: In a small sauce pan added all sauce ingredients. Simmer for 20 min.
