Steps:
- Combine black beans, corn, chopped tomatoes, and next 7 ingredients in a bowl. Cover and chill at least 2 hours. Add avocado just before serving. Serve with tortilla chips or Fritos scoops. -- I never measure for this recipe, just add til the amounts seem right. ... I usually omit the avocado, tomato and cilantro completely- I don't like cilantro much and it will keep much longer in the fridge without the tomato and avocado. Have served it over a sliced avocado as a side dish for a luncheon meal. Enjoy!
