Savory Pork Tacos with Caramelized Onions image

Flavors of chili powder and brown sugar add zest to this authentic Mexican dish.

2 clove(s) garlic, minced
1 1/2 cup(s) onion, thinly sliced
4 - flour tortillas, 10"
1/2 teaspoon(s) sea salt
1 pound(s) pork tenderloin, trimmed
1 teaspoon(s) brown sugar
1 cup(s) red bell pepper, chopped
1 tablespoon(s) olive oil
1 cup(s) frozen corn
- cooking spray
1 tablespoon(s) chili powder

Steps:

  • Preheat oven to 425°F. Combine chili powder, brown sugar and salt; rub evenly over pork. Place pork on a broiler pan coated with cooking spray. Bake for 20 minutes. Remove pork from oven; let sit 5 minutes before slicing. While pork cooks, heat oil in a large skillet coated with cooking spray over medium heat. Add garlic and onion; sauté, stirring frequently, until onions are deep golden; about 25 minutes.
  • Remove onions from pan and set aside. In same pan, sauté corn for about 3 minutes, until cooked and slightly browned. Warm tortillas in skillet, 15 seconds on each side (or microwave according to package instructions). Fill each tortilla with about 4 oz. pork; divide sautéed onion, corn and chopped red pepper evenly among each tortilla.
