BLACK BEAN AND WHITE CORN SALSA image

Yield Makes about 2 gallons of salsa.

Number Of Ingredients 9

Four 15-oz. cans diced tomatoes with green chilies
Two 15 oz. cans diced tomatoes
Three 12-oz. cans black beans, drained
One 15-oz. can white corn, drained
One medium red onion, finely diced
3/4 cup chopped cilantro leaves
1/4 cup lime juice
1 tablespoon apple cider vinegar
1 tablespoon sugar

Steps:

  • Place all ingredients in a large bowl and stir to combine. Refrigerate for at least one hour before serving with chips, or use a condiment with eggs, vegetables or grilled meat or fish.
