BISTRO SALAD image

Yield Serves 4

Number Of Ingredients 10

1/4 lb thick sliced bacon
4 eggs
6 cup mixed greens
2 tbsp red wine or sherry vinegar
1 tsp dijon
1 small clove minced garlic
1/2 tsp salt
1/4 tsp pepper
1/4 cup olive oil
1 cup croutons (optional)

Steps:

  • Cut bacon into 1/2" pieces and cook until crisp. Remove and drain. Use frying pan to fry eggs and allow eggs to rest in pan. Mix dressing and toss with greens - divide among 4 plates. Place one egg on top of each and sprinkle with bacon and croutons.
