BIBA'S STRACCIATELLA image

1 quart strong, brown, chicken broth
1 large eggs
3 tablespoons freshly grated parmesan cheese
3 tablespoons finely chopped fresh parsley
freshly grated nutmeg

Steps:

  • Beat eggs in a bowl with cheese, parsley, and nutmeg. Meanwhile, bring broth to a boil. add egg mixture to broth in a stream, stirring. Simmer 45 seconds. Season with salt and pepper.
