Steps:
- 1. In a large bowl,combine the first 5 ingredients. Combine the egg whites, egg, buttermilk,snf oil. Stir into dry ingredients just until moistened.
- 2. Pour batter by 1/4 cupfuls onto a hot griddle coated with cooking spray. Turn when bubbles just form on top, cook until second side is golden brown. Top with blueberries if desired.
- 3. You can freeze extra pancakes in a single layer on a baking sheet, then transfer to a freezer bag when ready. Pop in microwave or toaster.
