Best Versatile Cookies image

This is an excellent base for absolutely any cookie flavour you can dream of! In this recipe, I've featured both choc chip and white choc+macademia nut. Can freeze cookie dough (wrapped up in glad wrap) and bake it for later.

Number Of Ingredients 10

125 g butter
1 1/4 cups brown sugar
1 teaspoon vanilla
1 egg
1 1/2 cups flour
1/2 teaspoon baking powder
1 pinch salt
1 1/2 cups dark chocolate chips, or
1 cup white chocolate chips
1/2 cup crushed pre-roasted macadamia nuts

Steps:

  • Preheat oven to 180 degrees Celcius.
  • Beat butter and sugar till light and creamy.
  • Add vanilla and egg.
  • Add in dry ingredients (flour, baking powder, salt) till just combined.
  • Fold in choc chips/nuts finally.
  • At this stage, cookie dough may be rolled into a log and kept frozen;
  • Otherwise, just place spoonfuls of cookie mixture on a greased baking tray, bake for 15 mins, till they turn pale gold.
  • Allow cookies to cool for 5 minutes on tray before transfering them elsewhere, (if there're still any left by this time!).
