BEST EVER CARROT MUFFINS image

Number Of Ingredients 17

1 1/4 cup flour
1/4 cup whole wheat flour
1 cup white sugar
1/4 cup brown sugar
1 1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon alspice
2 cups finely grated carrots
1/2 cup raisens
1/2 cup walnuts
1/2 cup angel flake coconut
1 apple, peeled, cored, and grated
3 eggs
1 cup vegetable oil
1 1/2 tsp vanilla

Steps:

  • Put all ingredients in large mixing bowl, mix well. Grease regular sized muffin tin (for twelve muffins). Preheat oven to 350. Fill tins to top. There should be exactly enough for the twelve. Bake for 25 minutes.
