Best Blueberry Pie image

This recipe comes from my dear friend Carol, from JAP...this is my first attempt at a Blueberry pie, but thanks to her graciousness in sharing her recipe, I believe it turned out beautiful. I used my crust, Carol's filling. Enjoy! My photo's Recipe is courtesy of Carol Zecchin...hugs!!

Number Of Ingredients 9

3/4 - 1 c sugar - i used 1 cup
1/4 c plus 1 tablespoon flour
1/8 tsp salt
1/4 tsp nutmeg
4 c fresh blueberries, i used frozen, only because fresh weren't available
1 Tbsp lemon juice
2 Tbsp butter
2 - 9 inch, unbaked pie crusts
1 large egg, beaten with small amount of water

Steps:

  • 1. Preheat oven to 425 degree F.
  • 2. Combine the first 4 ingredients in a large bowl; stirring well.
  • 3. Add berries and toss gently. Set aside.
  • 4. Place 1 pie crust in a 9 inch pie pan. Spoon in berries.
  • 5. Dot with butter, and sprinkle with lemon juice.
  • 6. Place second crust over top the berries; crimp edges. Cut slits to allow steam to escape. Brush the crust with beaten egg. Sprinkle with sugar.
  • 7. Bake at 425 degree for 10 minutes. Reduce heat to 375 and continue baking 30 - 35 minutes more. Shield crust with foil. Enjoy! I know my son will...this pie can't cool fast enough for him...lol!
