BELGIAN ENDIVE AND APPLE SALAD image

3 Tbsp extra-virgin olive oil
1½ Tbsp apple cider vinegar
1 large Fuji apple, unpeeled, quartered, cored, thinly sliced
1 large head of Belgian endive, thinly sliced crosswise

Steps:

  • Whisk olive oil and vinegar in small bowl to blend. Season dressing to taste with salt and pepper. Combine apple slices and Belgian endive in medium bowl. Add dressing and toss to coat. Serve immediately.
