BEETS WITH LIME BUTTER image

Number Of Ingredients 7

3 Tbsp butter
1 1/2 lb beets, grated (about 3 1/2 cups)
1/4 tsp lime zest
1 Tbsp lime juice
3/4 tsp salt
1/2 tsp pepper
scallion greens

Steps:

  • Saute beets and lime zest in 2 Tbsp butter, about 2 minutes. Remove from heat and stir in remaining butter, lime juice, salt and pepper. Garnish with scallions.
