21/2 tablespoons cider vinegar
2 tablespoons chopped onion
2 teaspoons sugar
1/4 cup oil
2 tablespoons chopped parsley

Steps:

  • mix all together and pour over home cooked beets or drained canned beets. Let stand to marinate.
