BEET AND CARROT SALAD image

Number Of Ingredients 10

50 ml sweet onion, diced
4 to 6 medium beets, peeled and shredded
3 medium carrots, scrubbed and shredded
25 ml chopped dill
Dressing
1 tsp dijon mustard
45 m red wine vinegar
45 ml canola or sunflower oil
5 ml caraway seeds, toasted and ground
salt and pepper to taste

Steps:

  • In a medium bowl, combine onions, beets, carrots and dill. Set aside. To make the dressing, combine the mustard, and vinegar in a small bowl. Whisk until combined. Slowly add the oil until smooth and emulsified. Add caraway seed. Alternatively, blend the lot together in one go. Season with salt and pepper to taste. Toss dressing into beet mix, more salt and pepper if necessary.
