BEER BRAISED PORK CHOPS image

Number Of Ingredients 13

4 boned center-cut porl loin chops ( 1 inch thick / 7oz. )
3 cups (2 twelve oz. bottles ) flavorful beer such as amber ale .
1/4 cup kosher salt
1/4 cup firmly packed brown sugar
tablespoon of black peppercorn
tablespoon of mustard seed
tablespoon of mustard seed
tablespoon fennel seed
2 cloves garlic , peeled and crushed
3 tablespoons olive oil
3 red onions ( 1 3/4 lb. )
sliced thinly
1/3 cup apple cider vinger

Steps:

  • Place beer , salt , 2 tablespoons of brown sugar, peppercorn, mustard and fennel seeds, and garlic. Heat over medium heat until sugar and salt disolves. Cool mixture place chops and brine in a 2 Gallon Zip Lock Bag. Remove and rinse chops , discard brine, pat dry and brown in olive oil. Should take apx. 6 minutes Transfer chops to a plate. Add onions to pan . Stir frequently until browned 20 to 25 minutes . Lower heat if necessary t o prevent scorching. Stir in vinger and remaining vinger and brown sugar and cook , scraping the bottom of the pan to loosen any brown bits , until liquid is almost completely evaporated. Place chops on top of onions and cover pan and cook 6 to 8 minutes . Center should be pink.
