Bananas n' Cream Bundt Cake image

A good cake to make with those left over bananas that no one wants to eat if they are too ripe. This is moist and tasty with either walnuts or pecans in it. My photo doesn't have the powdered sugar on it because it just came out of the oven and is too warm.

1/3 c butter or margarine
1 1/4 c sugar
2 eggs
1 tsp vanilla
1 1/4 c mashed bananas 2 to 3 medium
2 c all purpose flour
1 1/4 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 c sour cream
3/4 c chopped nuts

Steps:

  • 1. In large bowl, cream butter or margarine until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Add bananas and mix well.
  • 2. Combine flour, baking powder, baking soda and salt; add to the creamed mixture alternately with sour cream stirring just till combined. Stir in walnuts.
  • 3. Pour into a greased and floured 10 inch fluted pan. Bake at 350 degrees for 50-55 minutes or until a toothpick near the center comes out clean. Cool in pan for 10 minutes before removing to a cake rack and cool completely. When completely cooled dust with powder sugar.
