BEER BASTED BABY BACK RIBS image

Number Of Ingredients 13

6 cups beer
2-1/2 cups packed dark brown
sugar
1-1/2 cups apple cider
vinegar
1-1/2 tbsp chili powder
1-1/2 tbsp ground cumin
1 tbsp dry mustard
2 teaspoons salt
2 tsp dried crushed red
pepper
2 bay leaves
8 lbs ribs cut into 4 inch sections

Steps:

  • Bring first 9 ingredients to a boil in very large pot. reduce heat and simmer 1 min to blend flavors. add half ribs to sauce. cover pot and simmer until ribs are tender, turning frequently about 25 minutes. Transfer ribs to baking sheet. repeat with remaining ribs. Boil bbq sauce until reduced to 3 cups (about 40 mins). discard bay leaves. (can be prepared a day ahead of time. cover ribs and sauce separately and refrigerate) Prepare BBQ on medium heat. brush ribs with some sauce and sprinkle with salt. grill ribs until heated through, brown and well glazed, brushing occasionally with sauce. about 6 mins per side. transfer to platter and serve with remaining sauce
