Steps:
- Season beef and dredge in 1 ½ tsp flour seasoned with ¼ tsp salt and ¼ tsp pepper. Brown beef in oil for 2-4 minutes. Remove meat. Add onions and sweat. Add garlic and cook until garlic begins to color. Add beer, tomatoes, 1 cup broth, bay leaf, thyme, carrots and beef. Simmer covered in oven at 200° for 1 ½ hours. Add ½ cup broth if liquid is low. With 10 minutes remaining add peas. Serve with parsley as garnish.
