BEEF SOFT TACO BURRITO FAJITAS image

I didn't know exactly how to classify this or what to call it. It may have a funny name, but it has great flavor and is very satisfying. Very easy to make, too. It's a soft, warm flour tortilla with melted sharp cheddar cheese, filled with taco flavored ground beef cooked with sweet onions, a little chunky salsa, some chopped lettuce and a few dabs of sour cream. Hubby likes to add pickled jalapenos, but I sometimes add a little fresh chopped homegrown tomatoes and/or sliced avocado. Yum! Delish! We all love it and have it at least every two months or so. It's one the grandkids' favorites.

3 pound(s) ground beef
1 large sweet onion
- salt
- pepper
3 package(s) taco seasoning mix (i use 2 old el paso original & 1 taco bell)
1 3/4 cup(s) water
1 package(s) flour tortillas, your choice of size
1 pound(s) shredded sharp cheddar cheese (more or less)
- scallion greens, thinly sliced
1 jar(s) chunky tomato salsa (i prefer medium heat)
- lettuce, chopped or shredded
- sour cream
OPTIONAL TOPPINGS:
- optional toppings: sliced pickled jalapeno, chopped fresh tomato, sliced or chopped avocado, fresh minced cilantro, refried beans, sliced black olives

Steps:

  • (*Note: Times are approximate. Recipe may be halved.)
  • Gather and prep all ingredients (shred cheese, chop onions, wash and chop lettuce etc...)
  • Add ground beef to a large skillet; cook over medium/medium-high heat for 3 to 4 minutes; add chopped onions and continue cooking until no pink remains.
  • Cover skillet with lid or foil, reduce heat to low and cook for additional 3 to 4 minutes (to ensure that the meat is thoroughly cooked.)
  • Remove foil; return heat to medium-high and allow to cook several minutes to reduce the juice in the pan.
  • Drain cooked beef in mesh strainer over a heat-proof bowl; return drained beef to skillet.
  • Sprinkle beef with salt, pepper, and taco seasoning mix. Add 1 1/2 cups water; stir until thoroughly mixed, adding another 1/4 cup water if it looks too thick; bring to simmering boil, stirring constantly; reduce heat to medium-low; simmer for 4 to 5 minutes, stirring frequently.
  • Reduce heat to very low and cover while preparing the tortilla.
  • Place tortilla in medium size skillet over medium/medium low heat; evenly distribute cheese and a bit of scallions over tortilla.
  • For Folded Tortilla (taco style): Spoon some of the seasoned beef mixture over 1/2 of the tortilla; use an egg turner to fold other half over meat; cover with foil or lid for about 30 seconds.
  • Remove foil; carefully open tortilla; add some salsa, lettuce, sour cream and optional ingredients of your choice; refold tortilla; plate and serve immediately. May be eaten with hands (may be slightly messy) or with a knife and fork.
  • For Burrito Style: Spoon some of the seasoned beef mixture into middle of cheese covered tortilla, add toppings; fold burrito style. Cover with lid or foil for about 1/2 minute. Plate and serve.
  • Cover and refrigerate leftovers.
