1 lb cooked beef, sliced into strips(approximate)
1 lb sliced pork roast (sliced into strips)approximate
1 pkg 14 oz. large size flour tortillas (6 pack)
1 large red bell pepper, sliced into strips
1 large green bell pepper, sliced into strips
1 large onion, sliced & rings separated
2 pkg fajita seasoning packets
1 1/2 Tbsp olive or canola oil
2 Tbsp butter
2/3 c water

Steps:

  • 1. For this recipe I used pre cooked beef & Pork, but you can also use chicken or ground beef or any meat of your choice. This was a way for me to use my left over Seasoned Beef Filet, and Center Pork Loin Roast. So use what ever you have on hand.
  • 2. Wash & Cut the red and green bell peppers into strips, as well as slice the onions into thick slices but separate the rings. Cut the beef & pork also into nice size strips.
  • 3. Add the olive or canola oil and butter to a 12 inch skillet and heat over medium high heat. Then add the sliced peppers and onions.
  • 4. Cook till crisp tender, then remove from skillet.
  • 5. Add sliced meat to same skillet, then add the seasoning packets and water, cook and allow to simmer for about 3 to 5 minutes or until heated through.
  • 6. Add the vegetables back into the skillet with the meat and stir to mix together, and allow to simmer over low heat.
  • 7. Fill large tortilla with a generous serving of the meat mixture, fold and wrap and serve as desired, adding additional condiments if desired. Makes 6 generous servings.
