Beef Jerky Trail Mix image

This trail mix is sweet, salty, full of protein, and has a whole lot of texture that is perfect to just snack on or to make up and bag up before hitting the trails.

1 cup unsweetened flaked coconut
20 ounces roasted mixed nuts
2 (2.9 ounce) packages beef jerky, chopped
½ cup raw pumpkin seeds
3 ounces dried cranberries
3 ounces dried apricots, chopped

Steps:

  • Place coconut in a large skillet over low heat. Heat until toasted to desired doneness, about 5 minutes. Turn heat off and let cool.
  • Place nuts, jerky, pumpkin seeds, cranberries, and apricots in an airtight container and shake to combine. Add cooled coconut and shake again.
