Beef Enchilada Pie image

Number Of Ingredients 12

1 lb ground sirloin
1/8 tsp garlic powder
1/2 onion, chopped
1/4 tsp chili powder
1 1/2 c kidney beans, cooked
1 1/2 c pinto beans rinsed and drained
1 can(s) green chiles, diced and drained
1/2 c cream of mushroom soup
1 can(s) stewed tomatoes
6 mexican style corn tortillas
cooking spray
6 oz cheddar cheese, shredded

Steps:

  • 1. Cook ground beef, garlic, onion and chili powder in frying pan over medium heat until browned.
  • 2. Add beans and chiles.
  • 3. Preheat oven to 350.
  • 4. Mix 1/2 cup of soup (DO NOT ADD WATER) with stewed tomatoes.
  • 5. Layer on the bottom of an 8 to 9\" square baking pan coated with non-stick spray.
  • 6. Top with half the tomato mixture, half the meat/bean mixture and half the cheese.
  • 7. Repeat with a layer of tortillas, meat, sauce and cheese.
  • 8. Cover loosely with foil and bake for 45 minutes.
