Beef-Eggplant Casserole image

Number Of Ingredients 10

1 lb ground beef
1/4 cup onion, chopped
2 cups tomato sauce
Salt and pepper
1 cup sour cream
1 cup cottage cheese
1 Tbsp parsley flakes or 1/4 cup fresh parsley (chopped)
2 cups chopped eggplant
6 oz pasta (any kind, partially cooked and drained)
1 cup shredded cheddar cheese

Steps:

  • Preheat oven to 350ºF. Brown beef and onion. Stir in tomato sauce, salt and pepper.
  • Combine sour cream, cottage cheese, parsley, and eggplant. Add to noodles.
  • Put half of noodle mixture in 9x13 casserole dish, top with meat and cover with remaining noodle mixture. Sprinkle with cheese.
  • Bake for 45 minutes.
