BEEF BOURGUIGNON FONDUE image

Number Of Ingredients 11

3 pounds filet mignon, cut into 1-inch cubes
1 1/2 cups clarified butter, peanut oil or canola oil
Brandied Mushroom Sauce
2 shallots, peeled and chopped
3 tablespoons butter
2 large Portobello mushrooms, finely diced
1/2 teaspoon salt
2 teaspoons soy sauce
1/2 teaspoon sugar
2 tablespoons brandy
1 pint heavy whipping cream

Steps:

  • Beef 1. Heat oil until simmering. Instruct guests to skewer beef one cube at a time and submerge in oil until desired donenes is reached. 2. Serve with the following sauces and accompaniments: mustard and capers; Bernaise sauce; Brandied Mushroom Sauce (See recipe). Brandied Mushroom Sauce 1. In saucepan, sautee shallots in butter, then quickly add mushrooms, stirring about 3 to 4 minutes. 2. Season with salt, soy sauce, sugar and brandy and then add cream, stirring until it simmers. 3. Serve warm.
