BEAN & BARLEY SOUP image

Number Of Ingredients 15

1 cup multi-bean mix
6 cups water
14 oz whole tomatoes with juice
3 cloves garlic, smashed
2 stalks celery, chopped
2 carrots, chopped
½ onion, chopped
½ cup barley
1 bay leaf
1 ½ tbsp Italian seasoning
Black pepper to taste
½ oz mushrooms
3 cups fresh spinach
1 cup grated parmesan
1 tbsp balsamic vinegar

Steps:

  • Put beans, water, tomatoes with juice, garlic, celery, carrots, onion, barley, bay leaf, 1 ½ tbsp salt, Italian seasoning, pepper and mushrooms in slow cooker. Cover and cook on low for 8 hours. Stir in spinach, cheese, vinegar, cover and let soup cook about 5 minutes until spinach wilts. Season to taste with salt & pepper.
