Steps:
- Put beans, water, tomatoes with juice, garlic, celery, carrots, onion, barley, bay leaf, 1 ½ tbsp salt, Italian seasoning, pepper and mushrooms in slow cooker. Cover and cook on low for 8 hours. Stir in spinach, cheese, vinegar, cover and let soup cook about 5 minutes until spinach wilts. Season to taste with salt & pepper.
