Steps:
- Preheat oven to 425 degrees. Roast sweet potatoes for 40 to 60 minutes. Drain the jackfruit and cut out the tough center. Saute over medium heat for about 5 minutes, to cook out some of the liquid. Coat thoroughly with barbecue sauce and saute 5 minutes more. Transfer jackfruit to a shallow baking pan and mash with a fork to create an even layer. Place in oven alongside sweet potatoes and back 30 minutes, until the top becomes crispy. Slice open sweet potatoes and mash in a little butter. Shred the jackfruit and stuff the potatoes.
