Steps:
- Separate 3 eggs - whip white until stiff. In a separate bowl, mix yolks with fork and add in pinch of salt, baking soda, cinnamon & nutmeg. Fold yolks into whites. SLOWLY add powered sugar until batter will barely roll off spoon. Keep refrigerated until ready for use (or freeze for long storage). Mix with hot milk alone or add brandy, rum or peppermint schnapps.
