BAY SCALLOPS WITH SPINACH & GARLIC image

Number Of Ingredients 8

2 tsp. olive oil,
3 large cloves garlic, minced.
1 tsp lemon zest.
2 lbs fresh spinach stemmed and washed, but not dried.
2 tsp kosher salt.
Fresh ground black pepper to taste.
1 lb. bay scallops.
2 Tbls. fresh lemon juice. 1/4 cup white wine.

Steps:

  • Heat 1 tsp. oil in large pot over med. heat. Add garlic,lemon zest and cook, stirring constantly for 20 sec. Add spinach and toss from time to time until just wilted. Drain off liquid and season with salt and pepper. *Heat 1 tsp oil in large skillet. Add scallops and saute until just cooked thru about 1 or 2 min. Remove from pan and add lemon juice and wine. Cook, scraping bottom of pan for about 15-20 seconds. Remove from heat, toss scallops with salt and pepper, put mound of spinach in center of 4 plates and surrond with scallops. Serve immediately.
