Basque Mushroom Toast image

Number Of Ingredients 9

1 loaf French or Sourdough Bread (sliced)
4 tablespoons Olive Oil
1/2 pound Mushrooms (button or cremini)
2 cloves Garlic
1 tablespoon All Purpose Flour
1/4 cup Sherry
1 cup Beef Broth
1/4 cup Flat Leaf Parsley
1/4 teaspoon Red Pepper Flakes

Steps:

  • Thinly slice mushrooms (caps & stems)
  • Chop garlic
  • Chop parsley
  • Using 1 tbl of olive oil, brush bread slices
  • Heat 3 tbls of olive oil in a medium skillet over medium-high heat. Add mushrooms and garlic and cook, stirring occasionally,until tender(10 min)
  • Sprinkle flour over cooked mushroom/garlic mixture and stir (1 min)
  • Mix in sherry and red pepper flakes and simmer (3 min)
  • Add beef broth and cook until mixture thickens, stirring occasionally (20 min)
  • Season with salt & pepper and more red pepper flakes to taste
  • Preheat Broiler
  • Broil oil-brushed bread slices until golden
