BARLEY AND LENTIL SOUP image

Number Of Ingredients 15

3 T olive oil and (butter)
2 onion diced
4 cloves garlic
3 carrots diced
4 celery stalks diced
8 sun dried tomatoes jarred, chopped
1 red bell pepper (orange or yellow)
2 t dried basil
1 t dried oregano
Six 14 oz cans veg or chicken broth
1 28oz can crushed tomatoes
2 T tomato paste
1 C barley
1 C lentils
1 chorizo link diced (optional)

Steps:

  • Heat oil in large pot over med heat. saute onion and garlic until translucent, about 10 min. Add next 6 ingredients and cook until peppers are soft, stirring, about 6 minutes. min in 5 cans of broth, tomatoes, and paste. Bring to boil. (add chorizo) Stir in grains, reduce heat and simmer about 1 &1/2 hours until grains are tender. Add more broth as desired. Season w S &P
