Banana Oat Cookie Bars image

I tried playing around with a few recipes, and this is the one that worked out the best for my family. It's a light cookie; I found that making it into bars worked better for me, since I only had one hand and could not spoon them onto a cookie sheet. I also used a food processor to mix the batter to make it quicker and easier to do while holding my daughter. :)

Yield 20-40 Bars

Number Of Ingredients 13

2 tablespoons butter (melted)
3/4 cup shortening
1 egg
3 bananas
1 1/4 cups flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/2 teaspoon cinnamon
1 3/4 cups oats
1/2 cup walnuts (optional)

Steps:

  • Preheat oven to 375°F.
  • Grease an 8x9 (for thicker bars), or a 13x9x2 (for thinner bars) pan.
  • Slice up bananas (makes it easier to mix).
  • Mix butter, shortening, egg, and bananas until creamy.
  • In a separate bowl mix flour, sugar, baking powder, baking soda, salt, nutmeg, and cinnamon.
  • Slowly add the dry mix to the creamy mix until blended.
  • Mix in the oats.
  • Pour mix into pan.
  • Bake 10 minutes.
