Banana Nut Bread image

My Grandmother always said when gnats are flying the bananas are ready. To this day, I only use bananas that have black spots as that's when the flavor is fullest.

1/2 c shortening
2/3 c sugar
2 eggs
1 tsp vanilla extract
1 tsp baking soda
1 tsp baking powder
1/4 tsp salt
2 c flour
1 c ripe bananas
2 Tbsp cold water
1/4 c chopped nuts (optional)

Steps:

  • 1. Combine baking soda, baking powder, salt, and flour, set aside
  • 2. Cream shortening and sugar
  • 3. Add eggs and vanilla, mix
  • 4. Mix in dry ingredients
  • 5. Add bananas, water, chopped nuts, mix (just enough to mix all ingredients together)
  • 6. Pour into loaf pan sprayed with Pam and Bake @ 350 degrees for 50 minutes (or test by sticking a butter knife in middle and pull out..if knife is clear..it's done)
  • 7. Using a butter knife, go along edges for easy removal. Place on a wire rack to cool...Enjoy!!
