Banana Macadamia Bread image

A delicious quick bread. You can also use walnuts or hazelnuts instead of the macadamia nuts.

1 c bananas, mashed
1 Tbsp rum
2 c all purpose flour
2 1/2 tsp baking powder
1/2 tsp salt
1/2 tsp allspice
1/2 tsp baking soda
2/3 c superfine sugar
1/3 c butter
2 eggs
1 c macadamia nuts, coarsely chopped

Steps:

  • 1. Preheat oven to 350°F.
  • 2. In a medium-size bowl, mash bananas and rum.
  • 3. In another medium bowl, sift flour, baking powder, salt, allspice and soda together.
  • 4. In a medium mixing bowl, beat sugar and butter until creamy. Add eggs one at a time, beating well after each addition.
  • 5. Add flour mixture a little at a time until mixed in well.
  • 6. Slowly add banana mixture, beating after each addition until smooth.
  • 7. Add nuts.
  • 8. Pour mixture into a greased 8 inch x 4 inch x 3 inch loaf pan. Bake about one hour, until firm and a toothpick inserted in center comes out clean.
