Banana Cranberry Bread With Candied Ginger image

For the chopped candied ginger (crystallized ginger), I use ginger "chips" which are pre-chopped and come in a bag. You can find them in upscale grocers or natural food stores.

2 ripe bananas
1 large egg
1 tsp vanilla extract
1/3 c vegetable oil
1/4 c milk
1/4 c yogurt, low-fat, plain
3/4 c granulated sugar
1 1/2 c all purpose flour
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/2 c fresh cranberries, coarsely chopped
1/4 c candied ginger, chopped

Steps:

  • 1. Preheat oven to 350F. Coat a 9 x 5 inch loaf pan with nonstick cooking spray.
  • 2. Peel and mash banana in a medium mixing bowl.
  • 3. Add egg, vanilla, oil, milk, yogurt and sugar and mix until combined.
  • 4. In a large bowl, sift flour, spices, soda, baking powder and salt.
  • 5. Stir wet mix into dry mix until just combined.
  • 6. Stir in cranberries and ginger.
  • 7. Pour batter into prepared pan and bake 1 hour, or until wooden pick inserted in center comes out clean.
  • 8. Cool in pan 10 minutes and turn out onto wire rack to cool completely.
