BANANA CAKE (GRANDMA'S) image

Number Of Ingredients 9

1/2 cup butter
1 1/2 cups sugar
2 eggs, slightly beaten
1 cup banana, mashed (Grandma's note: 2)
1 tsp vanilla or lemon extract or both
2 cups flour
1/2 tsp baking soda or 1 tsp if sour milk is used
1/4 tsp salt
1/2 cup milk, sweet or sour

Steps:

  • Cream butter, add sugar gradually. Add eggs, beat thoroughly. Add banana pulp and flavoring. Sift dry ingredients together and add alternately with milk. Bake in moderate oven (350 F) 20 to 30 minutes. Frost with Cream Cheese Frosting (p. 659). *** Banana Nut Cake: Add 1/2 cup chopped nut meats (Grandma's note: pecans) to mixture. Miranda's Banana Cake: Add 1/2 cup semisweet chocolate chips to mixture.
