Balsamic Root Vegetables image

Number Of Ingredients 10

1.5 pound Sweet Potato
1 pound Parsnip
1 pound Carrot
2 Red Onion
.75 cup Cranberry - Dried, sweetened
3 tablespoon Olive Oil
2 tablespoon Balsamic Vinegar
1 teaspoon Salt
.5 teaspoon Pepper - Black, freshly ground
1 tablespoon Sugar - Light Brown

Steps:

  • Peel potatoes, parsnips and carrots and cut into 1.5 inch pieces.
  • Coarsely chop onions.
  • Slice sweet potatoes into 1.25 - 1.5 inch pieces.
  • Combine parsnips, carrots, onions and cranberries in a lightly-greased 6-qt. slow cooker. Layer potatoes on top.
  • Whisk sugar, olive oil, vinegar, salt and pepper in a bowl. Pour over vegetables. Do not stir.
  • Cover and cook in slow cooker on HIGH for five hours.
