Steps:
- Peel potatoes, parsnips and carrots and cut into 1.5 inch pieces.
- Coarsely chop onions.
- Slice sweet potatoes into 1.25 - 1.5 inch pieces.
- Combine parsnips, carrots, onions and cranberries in a lightly-greased 6-qt. slow cooker. Layer potatoes on top.
- Whisk sugar, olive oil, vinegar, salt and pepper in a bowl. Pour over vegetables. Do not stir.
- Cover and cook in slow cooker on HIGH for five hours.
