Baked Trout, Irish Style image

This trout dish is excellent served with a fresh-baked traditional Irish Soda Bread.

Number Of Ingredients 12

4 green onions, sliced
1 medium green pepper, chopped
1/4 c butter or margarine
1 c plain breadcrumbs
1/4 c fresh parsley, chopped
1 tsp lemon juice
1 tsp salt
1/4 tsp dried basil leaves
4 drawn, whole trout about 8-oz each (i've occasionally used fillets when that's all i can find)
salt, for rubbing
12 cherry tomatoes
sprig(s) fresh parsley, for garnish (optional)

Steps:

  • 1. Preheat oven to 350°F. Grease a 13x9-inch baking dish; set aside.
  • 2. Cook and stir onions and pepper in butter until onions are tender. Remove from heat. Stir in breadcrumbs, parsley, lemon juice, salt, and basil.
  • 3. Rub cavities of each with salt. Stuff each fish with about 1/4 cup of the stuffing.
  • 4. Place fish in prepared 13x9-inch baking dish. Bake in oven at 350° for 30 to 35 minutes, or until fish flakes easily with fork.
  • 5. Garnish with cherry tomatoes and sprigs of fresh parsley, if desired, and serve.
