2 cups instant white rice, uncooked
1-1/2 cups boiling water
1/4 cup MIRACLE WHIP Light Dressing
4 small boneless skinless chicken breasts (1 lb.)
1 pkt. SHAKE 'N BAKE Chicken Coating Mix
1 can (14-1/2 oz.) diced tomatoes, undrained
1/2 tsp. garlic powder
2 cups frozen broccoli florets
3/4 cup KRAFT 2% Milk Cheddar Cheese

Steps:

  • Heat oven to 400°F.
  • Combine rice, boiling water and dressing in 8-inch square baking dish; cover. Let stand 5 min. Meanwhile, coat chicken with coating mix as directed on package.
  • Add tomatoes and garlic powder to rice mixture; mix well. Top with broccoli and chicken.
  • Bake 45 min. or until chicken is done (165°F). Sprinkle with cheese; bake 5 min. or until melted.
