Baked Potato Salad image

This salad is served at a barbecue place a few miles from my house. Delicious!

Number Of Ingredients 9

4 baked potatoes
1/2 c sour cream
1/2 c mayonnaise
1/2 c peppercorn ranch salad dressing
8 bacon slices
1 c cheddar cheese, shredded
1 Tbsp hot sauce
salt and pepper to taste
2 bunch green onions, chopped

Steps:

  • 1. Scrub the potatoes, wrap in foil and bake 45 - 60 minutes in 400 degree oven. Unwrap and cool in refrigerator.
  • 2. Fry bacon until crisp, drain and cool; then chop into small bits. Set aside
  • 3. Cut baked potatoes into 1-inch cubes.
  • 4. In a large bowl, combine the potatoes, sour cream, mayo, ranch dressing, hot sauce, salt, pepper, and crumbled bacon. Mix together gently.
  • 5. Transfer to a serving bowl and top with chopped green onions.
