BAKED ONION RINGS image

Yield 30 rings

Number Of Ingredients 10

2 large vidalia onions
1.5 cups buttermilk
1 large egg
1 heaping cup of flour
1/2 tsp dry mustard powder
1/2 tsp cayenne pepper
1 1/2 tsp dried dill
1 tsp garlic salt
2.5 cups panko breadcrumbs
1/2 cup parm cheese topping

Steps:

  • Preheat oven to 425 degrees. Mix the flour, cayenne, garlic salt, mustard powder and dill in a shallow dish. Whisk the buttermilk and egg together and season generously with salt and pepper. Mix the breadcrumbs and parmesean, crushing the breadcrumbs slightly in a plastic bag or food processor. Add 1/3 cup of the flour to the panko/cheese mixture. Slice the onions in thick slices and separate the layers. Dip the onion rings in the flour, then into the egg/milk and then into the panko. Put finished rings on parchment paper lined baking sheet. Bake for 25-30 minutes until the edges begin to brown.
