I love fish and this recipe is a favorite of ours. I use flounder or cod. But you can really use any white fish of your choice. I wasn't always a fish lover, but my granmother made me eat this or else I was not allowed to have any of her Anise cookies. Well, I couldn't stop eating eat and asked for it as much as I could. Steps:
- 1. in medium saucepan add 3 Tbsp olive oil and saute onions until golden
- 2. add sun-dried tomatoes and cook stirring and adding the water a little at a time
- 3. when water has evaporated add the wine and cook about 4-5 minutes, remove from heat
- 4. In a baking pan spread the potatoes and top with remaing olive oil, salt and pepper to taste
- 5. place fish on top and sauce on top of that
- 6. bake 30 minutes in a 400 preheated oven
